The Art of Dry Storage
We place special emphasis on the rarity and integrity of Kunming dry storage—an approach deeply respected for its slow, natural maturation. In contrast to the more accelerated wet-storage methods commonly found in aged teas stored in Guangdong, Kunming’s dry climate allows Pu-erh to age gradually and gracefully. 

This patient evolution preserves the tea’s original vitality, fragrance, and texture. Over time, it develops a refined chen xiang (陈香, aged aroma) —free from heaviness or mustiness.

Artisan Jianshui Purple Clay Teapots

Jian Shui purple clay is produced in Jian Shui county, Yunnan province, China. The clay is extracted from the local "five color" mountain, in which the soil has abundant deposits of red, yellow, purple, white, and brownish clay content, which the locals refer to as "Wu Se Tu", meaning five color soil. Iron is the richest element in this clay, so a lot of Jian Shui teapots have a black color or are mixed tones, featuring reddish or copper tints. Jian Shui Purple Clay Pottery was established during the Tang dynasty, about 1200 years ago, and is one of the four famous Chinese potteries.

Green tea is an unoxidized tea which originated in China about thousands years ago. The processing of green tea involved rapid heat, which is used to “seal” the enzymes to prevent further oxidation. There are two methods used to fire green tea, pan-fired, or pan-fry method and steamed method. Most Chinese green teas use pan-firing method. Green tea has abundant anti-oxidants, along with other health benefits and has been widely studied around the world. Green tea is most cherished for its taste and freshness so early harvests, usually pre-ming in early April is considered the highest quality.


While China grows more than two thousand green tea varietals, we primarily focus on legendary green teas from their true origins, the real deal, as terroir is a very important factor in the quality and taste of green tea.  Some of the most renowned green teas we carry are West Lake Dragon Well, Huang Shan Mao Feng, Liu An Gua Pian, Tai Ping Hou Kui, and Anji Bai Cha.

Green Tea Steeping Guide

To get the most enjoyment out of the tea, we recommend using a gaiwan or glass brewing vessel without an infuser. For the best tea tasting results, warm up the tea ware first, then add the tea leaves, take in the aroma, then pour the hot water on the side wall of the teaware. Please see more specific step-by-step brewing instructions below: 

1. Tea to water ratio: 3g to 150ml/5oz water.

2. Water temperature: 180-185 F or 85 Celsius. Never use boiling water.

3. Water quality: Recommend to use spring water or filtered water. No tap water, purified or distilled water. 

4. Brewing time: First steep about 2 minutes, subsequent steep 1-2min. If you use a gaiwan or porcelain teapot, please don’t cover your tea with the lid.

5. Friendly reminder, please don’t forget to smell the aroma before drinking your tea. Aroma is always the first part of your sensory tea experience.

Chinese Oolong Tea

Chinese oolong tea is a type of partially oxidized tea that bridges green and black tea, offering an exceptional range of aromas and flavors. Oxidation levels typically range from 20% to 80%, with taste shaped by terroir, varietal, and traditional processing methods such as withering, rolling, and controlled oxidation. Some oolongs continue to develop complexity with age.

Our collection features three classic Chinese oolong styles: Wuyi Rock Tea (Yancha) from the Wuyi Mountains, known for its signature mineral “rock rhyme”; Phoenix Dan Cong from the Phoenix Mountains, celebrated for naturally floral and fruity aromas; and Tie Guan Yin from Anxi County, prized for its elegant orchid fragrance in both roasted and green styles.

Highly aromatic and layered, oolong teas unfold beautifully over multiple infusions and are traditionally brewed using the Gongfu method. All oolong teas naturally contain antioxidants, making them both a refined and rewarding choice for everyday enjoyment.

Chinese White Tea

Meimei Fine Teas presents an exceptional selection of authentic Chinese white teas, with Silver Needles and White Peony as shining examples of elegance and heritage. Directly sourced from the prestigious Fuding county of Fujian Province, our loose leaf white teas are handpicked and processed using traditional methods that honor the artistry of Chinese tea-making.

White tea is the least processed of all classes of tea. The making of white tea only involves three steps - picking, withering, and drying. Therefore, it is only slightly oxidized. Due to its natural “unprocessed” nature, white tea has an abundance of anti-oxidants.

While white tea is grown throughout Fujian province. Fuding county, located in southeastern China's Fujian province, is the most sought-after source for high quality white tea. It has a unique terroir with 90% hilly land, and is credited as the "Home of Chinese White Tea". Our white tea comes solely from Fuding county, as we only source the best authentic tea from its true origin. 

There are four categories of white tea, silver needles, white peony, gong mei and shou mei. Silver needles are the highest grade white tea, the first pluck of the season and consist solely of buds. The four categories have their own unique tasting profiles with Silver Needles being the most delicate.

Known for its calming properties and high antioxidants, white tea is traditionally regarded as a medicinal tea among the locals.

Yellow tea is a class of tea based on green tea but with some oxidation.  Due to its special process, the tea leaves and the liquor are both yellowish, thus the name yellow tea. This process has an added step of slight oxidation called Wodui. Yellow tea is exclusive to China's tea-making history. However, the prevalence of yellow tea-making and the skills required have diminished in recent past due to its high cost, and limited access outside the producing region. Yellow tea has the same health benefits as green tea, and is more soothing to the stomach and has a sweeter taste in general. Meng Ding yellow tea is one of the three major yellow teas in the world of tea.

The process of scented tea is very different than the flavored or blended tea. Modern version of flavored tea is to add dried fruits or flowers into the tea leaves. Scented tea is very common to use artificial scents, oil extract oils or other artificial agents to add fragrance to the tea leaves. Our selection of scented tea is traditionally made with high quality tea leaves that takes hours and weeks to absorb the scent from the fresh flowers, such as Jasmine green tea, or smoke from the pine, such as Lapsang Souchong black tea. Phoenix Dan Cong is a type of exquisite Chinese oolong tea, originating from the Feng Huang mountains of Chaozhou prefecture, Guangdong province. It is also called Feng Huang tea. Like other Chinese oolong teas, Phoenix oolong is a semi-oxidized oolong tea, slightly lighter roasted/fired than that of Wuyi Rock Oolong tea. Phoenix dan Cong is cultivated from the local Feng Huang Shui Xian varietal.

Dan Cong means single grove in Chinese. Each single grove has its own natural floral fragrance and tasting profile. Phoenix Dan Cong is a collective or general term for all single grove Phoenix teas. Today, the most remarkable phoenix Dan Cong oolongs still come from Wudong Mountain, in the Feng Huang range.

It has many different varietals and name categories. Some are named after the varietal and others named after their fragrance, leaf color or size, the shape of the leaf or tree, or after the aroma of the liquor. In general, Phoenix Dan Cong has many different fragrances with many complex flavor profiles that are captivating to oolong tea lovers. Chinese tea drinkers especially the locals still use Gong Fu brewing style to bring out the best of this exquisite oolong tea.

During each type of class, you will gain a comprehensive knowledge about tea, a glimpse into the history and culture of tea, a review of true tea origins and their cultivars, a look into the craftsmanship involved in the making of fine teas, and a summary of the unique health benefits provided by specific teas. And to add to the fun, each class you will taste 4-5 distinctive world class teas. All classes are conducted by Victoria Wu, our own tea expert, who brings first-hand knowledge and expertise through formal training as well as from her various extensive treks throughout the tea-producing regions of China.

Tie Guan Ying is one of the most revered and sought-after oolong teas in China. Sourced directly from the master Zhou in Anxi, Fujian province, handpicked and hand rolled. The authentic high quality Tie Guan Yin should have the shape of so called "Qing Ting Tou", meaning Dragonfly Head. The quality of Tie Guan Yin as well as taste are traditionally graded into four types, Zhen Wei, Xiao Zhen, Xiao Qing, and Tuo Shuan. Zhen Wei and Xiao Zhen is the best among them and Tuo Shuan is the inferior grade.

Wuyi rock oolong is a specialty oolong tea produced in Wuyi mountain region of Fujian province, China. The Wuyi mountains has been listed as a UNESCO World Heritage Site and World Natural Heritage Site for its abundance of species and rich history. Wuyi rock oolong tea is so named because of its geographic characteristics, and almost all of the rocky cliffs grow tea. Wuyi rock oolong teas from the core 32-rock producing areas are the most thought after premium oolongs, the locals call it "Zhen Yan", meaning the true rocks/cliffs, to distinguish from other areas, as far as Jian Yang county where is more than 100 miles away, that produce more inferior rock oolong teas and sold at much cheaper price.

There is a Chinese saying, "Every cliff has tea bushes. If there is no cliff, there are no tea bushes." Owing to its soil, as well as the spring water that flows year around from the cliffs to the streams, Wuyi oolong is especially rich in minerals. Wuyi rock oolong is usually harvested in the spring, traditionally charcoal-fired through the summer and the fall. Wuyi rock tea has rich complex tasting profiles with strong floral and fruity taste.
