A Rare and Calming Green Tea

Anji Bai Cha, which translates to “white tea” in Chinese, is in fact a prized green tea, renowned for its delicate flavor and soothing qualities. This tea is from Da Xi village in Anji County, Zhejiang Province — the heart of authentic Anji Bai Cha —this tea represents the purest essence of the region. While imitations are produced in other parts of Zhejiang province and elsewhere in China, only tea from Anji County truly captures the superior taste and character that this variety is celebrated for. We take pride in sourcing exclusively from the core producing areas to ensure exceptional quality and authenticity in every cup.

The tea leaves are a pale, vibrant green with a freshly-plucked appearance that they maintain even after drying. Unlike other green teas that are harvested throughout the spring, Anji Bai Cha has an extremely limited picking window —typically before April 15th , and only harvest in the spring, making it one of the most seasonal and sought-after green teas in China.

Rich in amino acids—more than any other green tea—Anji Bai Cha is known for its calming and stress-relieving properties. Its flavor is floral, fresh, and smooth, with a sweet lingering aftertaste. Sweet vegetal notes with a funky twist

"Summary - This tea has a bold sweet taste that comes together with aromas not typically found in Chinese green teas, and not in any other Anji Bai Cha I have tried. It’s a fragrance combo that you might not be used to, but one that has intriguing layers and complexity. Steeping - 185F in a 150ml porcelain teapot for 180s. Aroma - There is a strong note of sweet peas, dominant in the foreground, with papaya in the background as soon as you inhale. Then, something funky that takes prominence as the tea cools and is harder to pin down - dark shoyu mixed with white truffle, perhaps. I’ve noticed similar funky aromas in Awabancha (Japanese fermented tea) and some medium aged (5-7 years) raw puerh. I haven’t noticed this unusual secondary aroma in other Anji Bai Cha that I have tried, and it lends a unique complexity to this one. Taste - Sweet peas dominate at the start, with very light floral notes lingering behind - honeysuckle and daisy come to mind. Aftertaste - The sweet pea disappears entirely as the floral note lingers after swallowing, then transitions to a light rock sugar on the tip of the tongue. Texture - This is not as thick or full-bodied as some other Anji Bai Cha I have had; rather, it is juicy and somewhat silky. There is a pleasant astringency that starts out almost imperceptible, builds up slowly, and becomes much more noticeable throughout the session. Progression Through Steepings - The fragrance is much lighter after the first steep. It shifts slightly more toward the sweet pea and away from the funk, but those scents are still present if much less intense. The floral notes that were just in the taste during the first steep now come out in the aroma, also very lightly. The taste similarly gets lighter and takes on a hint of an astringent citrusy zing, perhaps grapefruit."
