Phoenix Dan Cong is a type of exquisite Chinese oolong tea, originating from the Feng Huang mountains of Chaozhou prefecture, Guangdong province. It is also called Feng Huang tea. Like other Chinese oolong teas, Phoenix oolong is a semi-oxidized oolong tea, slightly lighter roasted/fired than that of Wuyi Rock Oolong tea. Phoenix dan Cong is cultivated from the local Feng Huang Shui Xian varietal.

Dan Cong means single grove in Chinese. Each single grove has its own natural floral fragrance and tasting profile. Phoenix Dan Cong is a collective or general term for all single grove Phoenix teas. Today, the most remarkable phoenix Dan Cong oolongs still come from Wudong Mountain, in the Feng Huang range.
 
It has many different varietals and name categories. Some are named after the varietal and others named after their fragrance, leaf color or size, the shape of the leaf or tree, or after the aroma of the liquor. In general, Phoenix Dan Cong has many different fragrances with many complex flavor profiles that are captivating to oolong tea lovers. Chinese tea drinkers especially the locals still use Gong Fu brewing style to bring out the best of this exquisite oolong tea.


Steeping Guide:

210oF, 4 grams (heaping 2 tbsp) for 6-8 oz of spring/filtered water, adjust to taste, 30 seconds, up to 8 steepings. We advise against the use of tap water as well as purified water.

Gongfu brewing guide:  

It is recommended to use the Gongfu brewing method in order to get the best out of the tea. Use a gaiwan or Yixing clay pot to enhance the aroma and taste, usually 7 grams (2 rounded tbsp) of dry leaves for 120 ml (3.4 oz) of water. When using gongfu brewing method, it is essential to warm up the brewing vessel so that the water temperature will not drop significantly before brewing and also quickly rinse the tea before the first brewing. The recommended brewing time is 10s,10s, 20s, 20s. You may add 10-20 seconds steeping time for each subsequent infusion.
