Taipin Houkui Green Tea

Anji Bai Cha, literally "white tea" in Chinese, is actually a green tea. It's one of the most sought-after teas in China. It has the freshest appearance of all green tea, and retains the original shape of the leaves! Richest in amino acids of all green teas, this nourishing tea helps to reduce stress and promote relaxation. It is crisp, light and sweet, very soothing and refreshing. A must try for green tea lovers and also great for novices, easy to steep, and resists bitterness, even when over-steeping. 

Once considered a "lost tea," Anji Bai Cha, literally "white tea" in Chinese, was recorded as late as 900 years ago, within the pages of the Da Guan Cha Lun, written by Emperor Hui Zhong of the Song Dynasty. It enjoyed a resurrection in the 80's, and is now widely-grown throughout Anji County in Zhejiang Province, China. Despite its name, it's actually a green tea.    

Anji Bai Cha leaves maintain a vibrant green, "freshly-plucked" appearance despite being dried. Unlike other green teas that have long harvest periods, this tea has a small window of only 30 days in the early spring. Due to its limited production, Anji Bai Cha is one of the most sought-after green teas in China.

This tea has a mild vegetal flavor, a hint of roasted nuts, with sweet refreshing aftertaste. This tea is very forgiving, easy to brew, can withstand a hot brewing temperature without risking bitterness.

180-185oF, 4 grams (2 tbsp) for 8-10 oz of spring/filtered water, adjust to taste, 1-2 minutes, 3 steeps. We advise against the use of tap water as well as purified water.
