From the reputable white tea producer in Fuding, this tea was harvested in April 2013, sun dried and stored, aged for three years then compressed into cakes in 2016. After 6 years of aging, this tea has strong honey note, a taste of dates and hint of cantaloupe, smooth, very soothing, with strong sweet aftertaste or Huigan. This exquisite tea is from its true origin, Fuding county of Fujian province. Fuding is the original area for cultivation and production of white tea, dating back to the early nineteenth century. Fuding has a unique terroir with 90% hilly land, and is credited as the "Home of Chinese White Tea". White Tea has gained its popularity in recent decades and has also been grown in other parts of China, but the quality and flavor vary significantly. However, Fuding white tea remains the most sought after white tea.

White Peony, or "Bai Mu Dan" in Chinese, is picked with one bud and two leaves from the Fu Ding Da Bai varietal. This tea was picked in April, sun dried and stored, and hand compressed into cakes for easy storage and transit. As it ages, the taste becomes smoother and sweeter. It is a great every day tea as refreshment and great paired with food.

    Tasting Profile

    It has strong honey note, a taste of dates and hint of cantaloupe, smooth, full bodied, very soothing with strong sweet aftertaste. It becomes sweeter in the later steepings. It can be paired with a variety of food. 

    Steeping Guide

    205oF, 4g (1-2 tbsp) for 8 oz of spring/filtered water, adjust to taste, 0.5-1 min,  5-8 steepings. We advise against the use of tap water as well as purified water.
